Pantry Chili

I was in the mood to cook something warm and cozy, but I had no plan. I opened up the pantry and started pulling things out and this is the reason the ingredient list is so crazy for chili. But guess what? It worked!!

Ingredient List

1 lb ground beef
1/2 onion
5 garlic cloves (crushed)
2 red bell peppers
ample amount of red wine
olive oil
1 can diced tomato (no salt added)
1 can tomato paste (no salt added)
1 small can of tomato sauce (no salt added)
1 can of whole or chopped potatoes
1 can of white navy beans
Chili powder

Garnishes/Extras
Shredded Cheese
Blue Corn Tortillas (no salt added)
HotSauce
Serve over rice if desired or on top of hotdogs!

The Process
Brown ground beef in a large, wide pot ( drain, remove from pot and put aside). In the same pot, sautee the onion, garlic and redbell pepper in olive oil until fully cooked.

-Pour in red wine to almost cover the vegetables. Cook to reduce wine.
-Add the ground beef back to the pot.
-Add 1 can diced tomato, 1 can tomato paste,1 small can of tomato sauce, navy beans and potatoes. Simmer all ingredients for about .
-Add chili powder (to taste).
